Tomato Soup Rarebit

Rarebit, or "Rabbit" in some circles, is divine. A mixture of strong mustard, ale and Cheddar, heated into a sauce, poured over toast and broiled. 

 

 

HEINZ took the liberty of removing the mustard and ale and adding a can of their own Cream of Tomato Soup. 

The soup is still in production, but had to be coaxed into a transatlantic crossing from Great Britain. 

The copywriter described this dish as "highly salubrious". Salubrious, circa 1937, clearly involved the addition of American Cheese to the diet.


Recipe: Tomato Soup Rarebit

Ingredients:

2 T. Butter

3 T. Flour

1 Can HEINZ Cream of Tomato Soup

1 Cup grated American Cheese

Toast Triangles

  1. Melt 2 Tablespoons of butter and add to this 3 Tablespoons of flour, and create a roux (look it up).
  2. Add a tin of HEINZ Cream of Tomato Soup, when the soup is thickened, add 1 cup of grated American Cheese. Serve with toast triangles.
